Ingredients (for 4 patties, about
110g each):
2 1/2 cups cooked black-eyed peas,
drained, rinsed, and pat dried
1/2 cup parsley, washed, drained, and
pat dried
2 tb tomato paste
1/4 cup nutritional yeast
1 flax egg (3 tb water + 1 tb flaxmeal)
1 tb onion powder
1/2 tsp garlic powder
2 tsp ground cumin
2 tsp ground paprika
½ tsp salt
¼ tsp pepper
Olive oil for brushing, optional
Instructions:
1. Preheat the oven to 180 °C.
2. Prepare the flax egg.
3. Spread out the black-eyed peas onto a lined baking sheet and bake for about 15
minutes.
4. When they cool down add them to a food processor and pulse just enough to
break them up a little, but not puree them. Add them to a bowl and set aside.
5. Add the parsley to the food processor and pulse a few times (Don’t break it down
completely).
6. Transfer the parsley to the bowl with the peas, add the rest of the ingredients, and
mix with your hands until well combined.
7. Shape into burgers.
8. Brush the burgers with olive oil (if you are using).
9. Bake until crispy and brown on both sides.
